The base recipe is as follows:
1 cup almond flour
1/3 cup melted butter
1 tsp baking powder
4 eggs
2 tablespoon of heavy cream
1 tablespoon vanilla
1.5 tsp almond extract
1/4 cup sweetener of choice (I used Splenda (sucralose) on some that I make, birch sugar (xylitol) on others with no change in texture or baking)
Preheat oven to 375°. Put all the ingredients into a food processor and pulse the ever living hell out of it. The more air you get into it, the fluffier they will be. Liberally grease silicon baking mold with baking spray, I used Pam. Carefully fill the molds 3/4 full with batter. Bake for 15-20 minutes until spring back to touch.
