Christmas is in 10 days!!! Are you ready!? I am not at all, I think I am still getting ready for Thanksgiving or better yet, Halloween! This year is flying by!
We just got our Christmas tree this weekend and finally got all the lights working. Christmas Carols playing in the background, so I thought this cake would get everybody in the Christmas spirit!
White Chocolate Peppermint Poke Cake!
It’s an easy recipe for your Christmas parties or just a delicious cake to have at home!
Cake Ingredients
1 cup coconut flour
5 eggs, whisked
2 tablespoons baking powder
1 tablespoon vanilla extract
1-1/4 cup unsweetened almond milk
1/4 cup whiskey
1/2 cup melted cocoa butter
1/2 cup granulated sweetener
Glaze ingredients
1/4 cup heavy whipping cream, warmed (liquid)
1/4 cup melted cocoa butter
1/8 cup granulated sweetener
1/8 tablespoon peppermint emulsion ***blend in food processor or blender and set aside***(make sure this stays liquid, if it begins to solidify warm up before use)
Frosting
1/2 cup powdered sugar substitute
1/2 cup melted cocoa butter
1/2 cup warmed heavy cream
1/2 tablespoon peppermint emulsion
1 cup whipped cream cheese
Mix all frosting ingredients in food processor and set aside**
INSTRUCTIONS
Mix all cake ingredients, pour into greased baking dish. Bake at 350 for 25 minutes or until inserted toothpick comes out clean.

While cake is freshly out of the oven, poke holes in it with fork all over, top with glaze so it sinks into cake. Let cake cool completely.

Top with frosting. Decorate as desired. I used @indiatree food colorings to add red & green decor.
