-2 cups unsweetened vanilla coconut milk
-1/2 cup heavy whipping cream
-1/8 block cream cheese
-1/2 Tbsp pure vanilla extract
-1 Tbsp banana extract
-1-1/2 Tbsp powdered splenda
-4 squirts of the great value stevia
-1/4 tsp xanthan gum
1: combine all ingredients, except xanthan gum, in a 3 to 4 cup container or one big enough for an immersion blender or mixer.
2: start mixing and add in the xanthan gum as you’re mixing.
3: once thickened up add to ice cream machine and churn to manufacturers specifications. Mine took approximately 15 minutes.
4: place in bowl and enjoy! Or optional place in freezer to freeze a little more.
